Chocolate Ganache-Topped Halloween Cake

Topped with a thick chocolate ganache, this cake is certainly one that draws attention. You can also make it in a jiffy, because you can use a store-bought sponge cake as a base. Decorate it Halloween-style and serve it to your trick or treaters. They’re bound to return next year!

  • For the ganache:
  • 10 ounces (285 grams) chocolate
  • 3 ounces (85 grams) butter
  • 1 1/2 tablespoon cocoa powder
  • 1 cup (225 grams) whipping cream
  • For the filling:
  • 7 ounces (200 grams) cream cheese
  • 1 cup (225 grams) whipping cream
  • 1/2 cup (55 grams) powdered sugar
  • 1 teaspoon orange food coloring
  • 1 store-bought sponge cake (12 inches x 6 inches/30 cm x 15 cm)
  • For the chocolate ganache, fill a saucepan with water and place it over medium heat.
  • Add the chocolate in a heatproof bowl and place it on top of the saucepan.
  • Melt the chocolate while slowly stirring, and add the butter. Keep stirring until it melts.
  • Add the cocoa powder and the whipping cream. Stir with a spatula until the ingredients combine into a smooth and thick glaze.
  • Place the cream cheese into a large bowl. Set up your mixer at high speed and start mixing the cream cheese. Pour the whipping cream slowly, add the powdered sugar, and the food coloring. Keep mixing until you obtain a smooth, thick orange cream.
  • Slice the sponge cake horizontally, splitting it into 3 separate layers.
  • Line a baking tray with parchment paper. Place the first sponge cake layer, and evenly spread 1/3 of the cream cheese filling.
  • Continue layering the cake, using the above-mentioned steps.
  • Use the chocolate ganache to decorate the cake according to your preferences!
